    1 head broccoli

    Prepare the broccoli by washing it well and then cutting off the bottoms of the stems that are dried out and woody. Peel the stems witha vegetable peeler. This step allows the broccoli to steam evenly and makes the stems more palatable. Cut the broccoli into desired size.

    Place a steamer basket in a pot and pour a few inches of water into the pot so that it reaches the steamer insert. Bring it to a boil. Put the broccoli into the steamer, cover, and steam until the broccoil reaches the desired tenderness. For most uses, broccoli is ready when it turns bright green and a fork can easily be inserted into a stem, which takes about 5 minutes.

    If the broccoli is to be eaten later, immerse it in a bowl of cool water to stop the cooking process, and then drain and chill.
