    Soup Coin Carrots

    3 1/2 cups sliced fresh carrots
    1 small onion (chopped or sliced)
    1 can low sodium or no sodium broth
    1/2 tsp Dried Celery Flakes
    1/2 tsp Dried Parsley Flakes
    1 bay leaf (I did not have the bay leaf when I made it)

    Recipe



    Bring broth to boil and add remaining ingredients. Return to boil, and reduce heat. Cover and simmer for 5-7 minutes. Drain and discard bay leaf.

    This is very flavorful. I bought the already packaged pretty sliced carrots with the waves. I also don't like my carrots mushed so I quit cooking them when they were a little firm.
