    1/4 cup low salt chicken broth
    1 medium onion, thin sliced
    2 cloves garlic, minced
    1 medium red bell pepper, cored and diced
    2 cups diced eggplant
    2 cups chopped yellow summer squash
    4 medium tomatoes, diced, with juice
    1 tablespoon dried basil
    1 tablespoon dried oregano
    1/4 teaspoon cayenne pepper
    2 cups chopped fresh spinach

    Recipe



    Heat broth in a large saucepan. Add onion, garlic and saute until onion softens, about 4 minutes. Add bell pepper, eggplant, squash, toamtoes with their juice, basil, oregano and cayenne pepper. Simmer, stirring frequently, for 12 minutes. Stir in spinach and continue to cook until all ingredients are heated through, about 4 minutes. Serve at once.
