    1 1/2 cups low salt chicken broth
    1 medium onion, chopped
    1 medium green bell pepper, cored cut in thin strips
    1 medium red bell pepper, cored cut in thin strips
    2 cloves garlic, minced
    1/2 teaspoon fennel seeds
    1/4 teaspoon cayenne pepper
    2 medium potatoes, chopped
    1 medium sweet potato, chopped
    2 cups green beans , cut in 1" lengths
    1 cup water
    1 medium zucchini, chopped
    1 medium yellow squash, chopeped
    1 cup low salt canned pinto beans rinsed and drained
    2 tablespoons lime juice
    1/2 cup chopped fresh parsley

    Recipe



    Heat 1/4 cup broth in a large saucepan. Add onion, bell pepeprs and garlic, and saute for 3 minutes. Stir in remaining broth, fennel seeds, cayenne, potatoes and sweet potatoes. Cover and simmer for 7 minutes. Add green beans and simmer for 5 additional minutes. Add water, zucchini, yellow squash, beans and lime juice. Bring to a boil, reduce heat, and simmer until squash is just tender, about 4 minutes. Garnish with parsley.
