    Artichoke Ragout

    List of Ingredients

    1 tablespoon olive oil (or use cooking spray, white wine or chicken broth)
    3 onions, peeled and chopped
    5 cloves garlic, crushed
    3 green bell peppers, seeded and sliced
    2 pounds tomatoes, chopped
    6 artichokes, trimmed and tops cut off
    1 cup white wine
    1 bay leaf
    1/4 teaspoon dried thyme
    1/8 teaspoon ground black pepper
    1 cup hot water
    1/4 cup chopped fresh parsley

    Recipe

    Heat olive oil over medium-low heat in a large skillet; add onions and cook until tender, about 5 minutes. Add garlic and green peppers ; cook for about 5 minutes. Stir in tomatoes; cook about 10 minutes more.

    Meanwhile, remove outer leaves of artichokes; cut artichokes into quarters. Scoop out any spiny portions. Place quarters into cooked vegetable mixture; add wine, bay leaf, thyme and black pepper.

    Bring to a simmer, add hot water, cover and simmer for 30 minutes. Add more water if necessary; continue cooking, covered, for another 30 minutes. Remove from heat; discard bay leaf and stir in parsley. Serve hot.
