    Squash and Onions

    List of Ingredients

    * 1 cup low-sodium chicken broth
    * 1 tbsp cornstarch
    * 5 large or 8 small summer squash, sliced as thin as you can get them
    * 1 large or 2 small Vidalia onions, chopped to fine mince
    * 1 pkt Splenda
    * fresh ground pepper

    Recipe

    Combine broth and cornstarch, set aside. Spray a big skillet well with cooking spray**. Add squash and onions to skillet. Grate a lot of black pepper over top. Sprinkle with Splenda. Add broth-cornstarch blend. Continue to cook, stirring often, 20-25 minutes or until tender and gravy has thickened slightly.
