Here's names (and authors where I remember) of some of my favorite cookbooks.. would highly recommend them. I will try to add to the list as I remember or come across more..

The Bake Sale Cookbook -- This one gives recipes for the sorts of items you would make or buy at a bake sale. Very straightforward directions and good recipes!

Beat That! Cookbook -- this one is awesome... lots of category listings; the author set out to include the "best of" recipes for a given type of food. Definitely has some keepers!

Rosie's Bakery All Butter Fresh Cream Sugar Packed No Holds Barred Baking Book (by Judy Rosenberg) -- a MUST HAVE for any dessert lover. She includes recipes from her bakery that are drop-dead decadent. Very easy to follow directions, plus good general cooking tips and info on baking. These recipes will knock your socks off...

The Best of Country Cooking (editor Linda Piepenbrink) - easy to make down-home cooking recipes from various contributors. Many simple but fantastic finds in this one.

America's Best Recipes - A Hometown Collection (put out annually by Oxmoor House) - These are the kind of recipes folks would bring to a bake sale or potluck or for a company supper. Contributing recipes from cooks across America.

How to Cook Everything - simple recipes for great food (by Mark Bittman). This is a wonderful guide for any cook. Around 940 pages, this has information on how to do and make everything.. Covers all the basics as well as recipes for each area. (i.e. gives a primer on different veggies - how to select and prepare for cooking, plus recipes for each.. how to make a roux, etc..).

Vegetarian Fast and Fancy (By Renny Darling); and Entertaining! Fast and Fancy-- some of the recipes are simple, some more elaborate, but they're all fantastic.

The Essential Vegetarian Cookbook (by Diana Shaw) -- as the cover says, "your guide to the best foods on earth.. what to eat, where to get it, how to prepare it". Gives basic recieps and variations.. mostly all simple to find ingredients.. a good guide to healthier cooking and eating options. I love it and use it often, and am not anywhere close to being vegetarian!
