Cheddar Quick Bread

2 cups all-purpose flour
1 Tbsp sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/4 cup (1/2 stick) butter
2 cups shredded sharp cheddar cheese
1 cup milk
1 egg, beaten
Recipe
Mix dry ingredients; cut in butter until mixture resembles coarse crumbs.
Stir in cheese. Add combined milk and egg, mixing just until moistened. Spoon into greased and floured 9x5 inch pan.
Bake at 400*F for 45 minutes. Cool 5 minutes; remove from pan.
Mexican cheese bread: Substitute 8 oz Mexican shredded cheese for the cheddar and stir in 1 can (4.5 oz) chopped green chilies, drained.
Makes 12 servings (1 loaf)
