A bean salad!
List of Ingredients
1 pound small white beans
1/2 cup chopped red onion
1/4 cup chopped fresh parsley
2 garlic cloves, minced
1/2 tsp salt
3/4 cup red wine vinegar
1/3 cup salad oil
1 tsp salt
1/4 tsp freshly ground pepper

Soak beans several hours or overnight in enough cold water to cover. Drain well. Cover again with water and bring to a boil. Reduce heat and simmer until tender, about 50 to 60 minutes, stirring occasionally. Drain thoroughly in colander, rinse under cold running water and drain again. Transfer to mixing bowl. Add onion, parsley, garlic, and 1/2 tsp salt; mix gently but thoroughly, being careful not to crush beans. Combine remaining ingredients and blend well. Pour over beans and toss gently to coat evenly. Cover and refrigerate 6 to 8 hours or overnight.
