    Ham and Corn Chowder - part 2

    List of Ingredients


    • 2 TBSP butter
    • 1/2 medium onion, finely chopped
    • 3 TBSP all-purpose flour
    • 1 (15 oz) chicken broth
    • 2 c cubed potatoes
    • 2 c half and half or 2 c milk
    • 2 (15 oz) cans corn, undrained
    • 1 1/2 c diced ham
    • 2 TBSP fresh parsley or 1 TBSP dried


    Instructions


    1. Melt butter in a medium saucepan.

    2. Add onion and cook until tender stirring frequently.

    3. Add the flour and stir to make a paste. Slowly add chicken broth, stirring frequently with whisk to avoid lumps.

    4. Add the potatoes. cover and cook for 10 minutes or until potatoes are barely tender.

    5. Stir in half-and-half and both cans of corn. Cook uncovered for six to eight minutes. Stir in ham and parsley.
