Mashed Sweet Potatoes

List of Ingredients
2 to 4 Tbsp milk or light cream
4 to 5 medium sweet potatoes, (1 1/2 pounds)
4 Tbsp butter, softened
3 Tbsp brown sugar
1/2 tsp salt
1/8 tsp ground cinnamon'
1/8 tsp ground nutmeg
Recipe
1. Remove milk or light cream from the refrigerator and let it stand at room temperature while preparing potatoes. Peel the sweet potatoes and cut them into large chunks. Put them in a pan with enough salted water to cover. Bring the potatoes to a boil. Reduce heat, and boil, covered, about 25 minutes or until very tender (fork tender). Drain, transfer potatoes to a large mixing bowl.
2. Add the butter, brown sugar, slat and spices to the potatoes. Partially mash with a hand masher. Add 2 Tbsp of the milk, mashing a bit more, until blended but still slightly lumpy. Add a little more milk, blend to desired consistency. Transfer to a warm dish and serve.
