    List of Ingredients


    • 3 1/2 lbs chicken parts with bone and skin, fat trimmed
    • 2 tbsp olive oil
    • 2 c chopped onion
    • 2 tbsp minced garlic
    • 1 tsp ground cumin
    • 1 1/2 c dry white wine
    • 1 c chicken broth
    • 2 tbsp fresh lemon juice
    • 3 tbsp jarred capers, rinsed, drained and chopped
    • 4 plum tomatoes, seeded and coarsely chopped
    • 1/2 c chopped fresh cilantro
    • 1 tbsp unsalted butter
    • 3 c cooked white rice


    Instructions


    1. Rinse Chicken and pat dry; season with salt and pepper. Heat 1 tbsp oil in a heavy 5qt pot over moderately high heat until hot but not smoking. Add chicken, in 2 batches, and cook, turning, until golden brown on all sides, about 8 min. per batch. Transfer as cooked, with tongs, to a plate, leaving fat in the pot.
    2. Add onion, garlic, and cumin to the pot; cook over moderate heat, stirring, 2 min. Add wine and simmer 5 min.
    3. Stir in broth, juice, capers, and tomatoes. Return chicken to pot and simmer, covered, 30-35 min. Stir in cilantro and butter; serve over rice.
