List of Ingredients
- 3 1/2 lbs chicken parts with bone and skin, fat trimmed
- 2 tbsp olive oil
- 2 c chopped onion
- 2 tbsp minced garlic
- 1 tsp ground cumin
- 1 1/2 c dry white wine
- 1 c chicken broth
- 2 tbsp fresh lemon juice
- 3 tbsp jarred capers, rinsed, drained and chopped
- 4 plum tomatoes, seeded and coarsely chopped
- 1/2 c chopped fresh cilantro
- 1 tbsp unsalted butter
- 3 c cooked white rice
Instructions
- Rinse Chicken and pat dry; season with salt and pepper. Heat 1 tbsp oil in a heavy 5qt pot over moderately high heat until hot but not smoking. Add chicken, in 2 batches, and cook, turning, until golden brown on all sides, about 8 min. per batch. Transfer as cooked, with tongs, to a plate, leaving fat in the pot.
- Add onion, garlic, and cumin to the pot; cook over moderate heat, stirring, 2 min. Add wine and simmer 5 min.
- Stir in broth, juice, capers, and tomatoes. Return chicken to pot and simmer, covered, 30-35 min. Stir in cilantro and butter; serve over rice.
