Chicken with Tomato Eggplant Sauce

List of Ingredients
- 1/2 pint grape tomatoes
- 1/2 lb thin spaghetti noodles
- 1/2 small eggplant, cubed
- 1 small onion, chopped
- 2 garlic cloves, chopped
- 1 tsp crushed red pepper
- 1 lb boneless, skinless, chicken breast, cubed
- 3/4 cup chicken stock
- 1/4 cup dry white wine
- 1/2 cup fresh parsley
- parmesan cheese
- salt and pepper to taste
- 3 tbsp oil
- baby portabellas, sliced, *optional
Instructions
- Cook and drain noodles.
- Large skillet, heat 1 1/2 tbsp oil over med-high heat.
Add eggplant cook 3 minutes. Remove and transfer to platter cover with foil.
- Add remaining oil to same skillet, add chicken cook 4 minutes. Add onions and garlic cook 2 minutes.
- Add red pepper, chicken stock, and white wine cook 3 minutes.
- Add eggplant back into skillet along with tomatoes and *mushrooms. Cook until tomatoes almost burst.
- Add Parsley and noodles, TOSS. Top with Cheese and Serve with bread.
