    Chicken with Tomato Eggplant Sauce

    List of Ingredients


    • 1/2 pint grape tomatoes
    • 1/2 lb thin spaghetti noodles
    • 1/2 small eggplant, cubed
    • 1 small onion, chopped
    • 2 garlic cloves, chopped
    • 1 tsp crushed red pepper
    • 1 lb boneless, skinless, chicken breast, cubed
    • 3/4 cup chicken stock
    • 1/4 cup dry white wine
    • 1/2 cup fresh parsley
    • parmesan cheese
    • salt and pepper to taste
    • 3 tbsp oil
    • baby portabellas, sliced, *optional


    Instructions


    1. Cook and drain noodles.
    2. Large skillet, heat 1 1/2 tbsp oil over med-high heat.
      Add eggplant cook 3 minutes. Remove and transfer to platter cover with foil.
    3. Add remaining oil to same skillet, add chicken cook 4 minutes. Add onions and garlic cook 2 minutes.
    4. Add red pepper, chicken stock, and white wine cook 3 minutes.
    5. Add eggplant back into skillet along with tomatoes and *mushrooms. Cook until tomatoes almost burst.
    6. Add Parsley and noodles, TOSS. Top with Cheese and Serve with bread.
