COOKINKAT'S BLACK BEAN SOUP

List of Ingredients
olive oil (just enough to saute veggies)
1 yellow onion
4 or more cloves garlic
2 cans black beans undrained
1-1 1/2 quarts water
1 Tbsp. cumin seed
1/2 Tbsp. oregano
2 bay leaves
1/2 Tbsp. salt
1 tsp. fresh black pepper
3 Tbsp. parsley
1/2 tsp red pepper
1/8 cup sherry wine
1/2 Tbsp. brown sugar
1/2 Tbsp. lemon juice
Recipe
Saute onions & garlic in olive oil for 10 minutes.
Add beans, water, cumin, oregano, bay leaves, salt, peppers, & parsley.
Bring to a boil, simmer uncovered for 1 1/2-2 hours. Smash some beans to thicken if desired.
Add sherry, sugar, and lemon juice. Simmer 30 more minutes.
Serve with a dollop of sour cream.
