CORN & BLACK BEAN CHIMICHANGA

List of Ingredients
1 can corn
1 can black beans
tomato, chopped
1/2 can Ro-Tel
1/2 can chopped green chiles
salt, pepper, little cumin to taste
salsa, about 1 cup
1/2 onion
2 cloves garlic
flour tortillas
SPINACH QUESO
1 lb. Velveeta
1/2 can Ro-Tel
1/2 can chopped green chiles
1/2 box cooked, chopped spinach, drained
Mix all together and melt cheese.
Recipe
Saute onion and garlic in small amount vegetable oil briefly. Do not brown. Add all ingredients to crockpot and cook on low for 5-6 hours. Assemble and top with spinach queso. Bake at 350 degrees just to heat through. (about 10 minutes) Serve with yellow rice topped with spinach queso. YUM!
