there are a ton of ingredients, but I think if you did not have one it would still be good. I used apple cider vinegar instead of red wine vinegar.
List of Ingredients
2 cakes firm tofu
Jerk Sauce:
1 med onion, coursely chopped(about 1/2c)
3 fresh green chiles seeds removed for a milder hot
3 Tbsp soy sauce
1/4 c red wine vinegar
2 Tbsp brown sugar
2 t grated fresh ginger
2 garlic cloves, minced or pressed
1 tsp each: dried thyme, ground cloves, ground cinnamon
1/2 tsp black pepper
Recipe
Place cakes between two cookie sheets, and weight the top enough so that the sides slightly bulge but do not split. Let stand for at least 30 minutes, you can assemble other ingredients. Combine all the sauce ingredients in blender and puree.
Preheat oven to 400
Drain the pressed tofu. Cut each cake into 3 slices. Stack the slices and cut through all three on the diagonal, in an x. This makes 12 pieces from each cake. Gently toss with marinade and place in nonreactive dish(9x13 or 8x12). Bake one hour, carefully turning the tofu every 20 minutes.
