VEGETARIAN CHILI

List of Ingredients
½ tsp olive oil
½ cup bell peppers
1 onion, chopped
3 cloves garlic, minced
29 oz. can stewed tomatoes
15 oz. can dark red kidney beans
16 oz. can pinto beans
2 cups frozen corn
3 TBSP. chili powder
1 ½ tsps. cumin
1 tsp. Blk. Pepper
2 zucchini, sliced or cubed
Optional: 1 cup long grain rice and 1 cup of water.
Recipe
1. cook peppers, onion and garlic in olive oil until tender.
2. Stir in tomatoes, beans, corn and seasonings. (If you would like rice, add rice and 1 cup of water now)
3. Bring to a boil, then reduce heat, cover and simmer for 30 min.
