    This recipe makes 3 tiny 2X4 loafs, or 1 large loaf. The carb count, per tiny loaf, is 16.7 each.

    List of Ingredients




    1/2 cup vital wheat gluten
    1/4 cup bake mix (carbsense "0"carb)
    1/4 cup flax meal
    1/2 teaspoon baking powder
    dash of salt
    2 teaspoons cinnamon
    1/3 cup oil
    2 eggs
    1 teaspoon vanilla
    3/4 cup splenda
    1 cup shredded zucchini
    1/3 cup walnuts

    Recipe



    Mix dry ingredients together. In another bowl, beat the eggs oil and vanilla. Add the dry ingredients to the egg mixture, and mix. Stir in the zucchini and walnuts, and mix well. Divide into 3 little or 1 large, greased loaf pans, and bake, at 325 degrees, for 35 minutes, until toothpick comes out clean.
