    Recipe makes 6 crepes. Total carb count for the recipe, is 10.5, using strawberries.

    List of Ingredients




    crepes
    2 eggs
    1/3 cup heavy cream
    1/3 cup water
    2 tablespoons butter- melted
    1/4 teaspoon salt
    2 teaspoons splenda
    3 tablespoons bake mix


    filling
    1/2 cup heavy cream
    1/2 teaspoon vanilla
    2 teaspoons splenda
    1 1/2 cups strawberries-sliced (or other fruit)

    Recipe



    Whip the cream, with the vanilla and splenda. Refrigerate, while making the crepes. To make the crepes, beat the eggs, cream, water, butter, salt, and splenda, until mixed well. Add the bake mix, and blend until smooth. Heat a frying pan, with a little butter. Pour 1/6 th of the batter in the pan, and tilt the pan, to spread out the batter. Fry until the crepe is dry and full of bubbles. Same as a pancake would look. Flip over, just long enough to brown the other side.

    Place crepe on plate, spread with whipped cream, and top with strawberries. Fold top of crepe over the mix. Top with more whipped cream and strawberries, if desired.
