    SPINACH DIP

    Recipe Introduction

    I like to serve it in a hollowed out french bread round, with the inside bread cut up for dipping and another loaf of french bread also cut up for dipping. But you can also serve it in a bowl with crackers or pita bread.

    List of Ingredients

    2 10 oz packages frozen chopped spinach, thawed and very well-drained
    1 8oz container soy yogurt
    1 cup vegan mayo
    2 vegetarian bouillon cubes
    1/2 to 1 cup minced fresh carrots
    2 cloves garlic, minced
    1 small onion, minced
    1/2 to 1 tsp cumin
    Pepper to taste

    Recipe

    Blend the mayo, yogurt and bouillon cubes until the cubes are chopped up very fine. Add the garlic, onion, cumin and pepper.

    Mix up the spinach and carrots. Add the blended mixture and stir.
    Refrigerate overnight to blend flavors.
