    Bruschetta with Roasted Garlic

    Recipe Introduction

    Yield: 8 Fast and easy. Goes well with spaghetti or soups

    List of Ingredients

    8 cl Garlic
    2 Tbs Olive oil
    1 tsp Marjoram dried
    1 tsp Basil dried
    1/2 tsp Thyme dried
    4 lb Tomatoes, peeled and diced
    1 loaf French bread

    Recipe

    1. Preheat oven to 350

    2. Brush unpeeled garlic cloves with one tablespoon oil and place in a small baking dish

    3. Roast garlic until soft when pierced about 15 minutes. Cool, peel and mash.

    4. Combine garlic, remaining one tablespoon oil and herbs in a large bowl.

    5. Stir in tomatoes and refrigerate for up to 2 hours

    6. Slice Bread into 1" slices and toast both sides under broiler

    7. Top toasted bread with tomato mixture and serv

    8. HINT: garnish with fresh italian parsley or fresh basil leaves and salt and pepper to taste
