    Mediterranean Salad Roll-Up

    List of Ingredients




    4 whole wheat tortillas
    1 cup cooked brown rice
    1/4 cup diced cucumber
    1/4 cup chopped scallions or green onions
    1 large tomato, chopped
    1 Tbsp. olive oil
    1 Tbsp. lemon juice
    2 Tbsp. coarsely chopped mint (or cilantro)

    Recipe



    Combine all ingredients and salt to taste. Mix well and allow to sit for 1
    hour in the refrigerator so that the flavors blend. Divide mixture evenly
    among the tortillas, fold ends, and roll up. May be prepared
    ahead and served later. Serves 4.

    ***Cut each roll-up once in the center diagonally. Lay one end on the plate
    on it's side on a dressing of shredded lettuce or sprouts. Stand the other
    end up, like a tower!
