Stuffed Mushrooms

List of Ingredients
1/2 C walnuts, finely chopped
1/2 C bread crumbs, preferably whole wheat
1 heaping tablespoon finely chopped fresh dill or less dried dill weed
3/4 C finely scrambled tofu, or grated chicken style vegemeat
2 Tablespoons soy milk--any kind
pepper to taste
16 large mushrooms
2 1/2 Tbsp. olive oilRecipe
1. Preheat oven to 375 degrees. Mix all but mushroom and oil.
2. Wipe mushrooms very clean with a damp cloth, then remove the stems and reserve for another use. Divide the mixture evenly and stuff each mushroom cap, pressing in the stuffing firmly.
3. Generously butter a baking dish that will hold all the mushrooms and place them in it, then drizzle the olive oil over each one. Bake for 20 minutes or until the mushrooms are juicy and the tops are lightly browned. Serve immediately.
