    1 cup spelt flour
    1/2 cup brown rice flour
    1/2 cup walnuts crushed
    2 tablespoons of EnerG Egg Replacer
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 tablespoon raw maple syrup
    1 ripe organic banana sliced
    1 cup water

    Lemon Maple Glaze
    1 tablespoon coconut oil
    1 tablespoon raw maple syrup
    1 tablespoon lemon juice
    1 tablespoon tapioca flour

    Recipe



    Preheat the oven to 350 degrees. Sift the dry ingredients (spelt flour, brown rice flour, walnuts, egg replacer, baking powder, baking soda, and salt) together. Add in the maple syrup, banana, and water and using a hand mixer mix well and all the banana slices are blended into small pieces. Place into a well-oiled 8 by 4 inch loaf pan. Place
    the loaf into the oven and let bake for approximately 50 minutes. A toothpick inserted and withdrawn from the loaf should come out dry when the bread is cooked. Allow the bread to cool and then flip the pan upside down to remove the bread. Slice and serve.

    Optionally top
    with a lemon maple glaze for a sweeter taste.

    Combine all the ingredients in a small pan mixing continuously on low heat. Stir until well mixed and all the ingredients are combined. Drizzle over the bread or cake. Place the dessert into the refrigerator to have the glaze solidify.
