    6 1/2 cups hot water
    3 tbsp yeast
    17-18 cups fresh ground whole wheat flour, separated
    2/3 cup oil
    2/3 cup honey (or alternative)
    2 tbsp sea salt
    2/3-1 cup vital wheat gluten

    Recipe



    In large mixer (Bosch or Dimension), mix water, yeast and 10 cups flouruntil blended. Allow to rest about 10 minutes. Add oil, honey, salt, and gluten. Mix well. Add flour one cup at a time while mixing until dough cleans the side of the bowl. Allow to knead for 6-8 minutes. Turn out onto lightly oiled counter. Turn to coat. Allow to rest for about 10 minutes.
    Separate to desired size/weight. I get 5 - 6 nice sized loaves, depending upon your pans (6 standard loaf pans). Allow to rise in oven for 25 minutes; turn oven to 350, with bread still in, and bake for 20 - 25
    minutes.
