    3 eggs
    2 cups sugar(or any sub)
    1 cup cooking oil
    1/2 teaspoon almond flavoring(I used 2 teaspoons vanilla)
    2 cups WFGF flour mixture your choice(mine this time was 1c.rice flour,1c.sweet potato flour)any flour will work same measurements)
    1 tablespoon cinnamon(I used 2 T.)
    2 teaspoons baking soda
    1 tsp salt
    1/4 tsp.baking soda
    2 cups grated Zucchini
    1 cup chopped nuts( any kind or leave out)

    Recipe



    Preheat oven .

    Beat eggs until light and frothy.Add sugar and beat well.Blend in oil and almond flavoring,beat thoroughly.Add zucchini ,blend together well.Mix dry ingredients(except nuts) together and sift if necessary,Gradually add to the wet ingredients, until well blended.

    Add nuts. Pour batter( a little runny) into 2 greased and floured(I didn't flour)loaf pans(9x5) I used small loaf pans to get more and freezing the rest in TUPPERWARE, this way I can get bread as I want it.

    Bake in a 350 oven about 1 hour or until a knife inserted in center comes out clean.

    I always cook my breads slower so they don't burn on top before the center is clean. I lowered my oven after 20 minutes to 200 and cooked about 1 1/2 hours.Really depends on your oven.All ovens are different.

    The bread came out very delicious.

    You can use any veggie with this recipe doesn't have to be Zucchini.
