    Cherry Almond Muffins

    List of Ingredients

    1 cups unbleached flour
    3/4 cups whole wheat flour
    1 ½ Tbsp Ener-G Baking Powder
    1/2 cup dried cane juice
    1/4 cup olive oil (or applesauce)
    1 tsp vanilla
    1 ¼ cup soy milk (or other, see page 26)
    1/2 tsp almond extract
    3/4 cup chopped, slivered or sliced almonds
    3/4 cup chopped fresh cherries (or canned well drained)

    Recipe

    Pre-heat oven to 400°F. Prepare muffin pan. Combine dry ingredients. Combine wet ingredients. Quickly stir wet into dry and pour into pan. Bake at 350°F for 20-25 min. Let cool before turning out onto rack. Yields 12 muffins
    Serves 12 Ready in: 60 minutes
