MILLET CRANBERRY MUFFINS

1 orange
1/2 cup maple syrup
1 egg replacer
3 T. olive oil
1 1/2 cups flour
1/2 cup whole wheat flour
1 T. baking powder
1/8 tea. sea salt
1 cup dried cranberries
3/4 cup millet
Recipe
preheat oven to 400. coat a 12 cup muffin tin with no stick spray or liners. grate 1 T. of rind from the orange and place in a large bowl. squeeze 1/3 cup of juice from the orange and add to the bowl. add syrup, egg replacer, and oil. whisk until blended. in a med. bowl, combine the flours, powder, and salt. mix and add to the syrup mix. mix just until blended. do not overbeat. the batter will be thick. stir in the cranberries and millet.
Spoon the batter into the prepared muffin tin, filling the cups about 3/4 full. bake for 20 mins. or until golden brown. allow to cool slightly on a wire rack. serve slightly warm. makes 12
