No-Grain Muffins

List of Ingredients
1 c. flaxseeds, ground
1/2 c. walnuts, ground
3/4 c. protein powder
2 t. baking powder
1 t. baking soda
1 t. cinnamon
1/2 t. salt
4 t. oil
2 eggs
2 t. vanilla
2/3 c. zucchini, peeled and grated
2/3 c. ricotta cheese substitute
grated zest of one orange
1/2 c. walnuts, choppedRecipe
1. Line nuffin tin with paper muffin cups.
2. In a small bowl, mix all dry ingredients.
3. In a large bowl, mix all wet ingredients.
4. Fold dry ingred. into wet ingred. Fold in chopped
walnuts.
5. Pour into muffin tins and bake in preheated oven at
350° for 20 to 25 minutes.
