    3 cups soy or rice milk
    2/3 cups cashews
    1/2 cup almonds
    2/3 cup dates
    1/2 cup coconut
    1 teaspoon vanilla
    1/2 teaspoon sea salt
    1 1/4 cup Ener G white rice baking mix
    1/3 cup corn flour
    1/3 cup brown rice flour

    Recipe



    Blend nuts and dates in milk until they are in small pieces. Pour into a
    bowl and stir in salt, vanilla, coconut, and flours. Mixture should be
    fairly thick. Add a touch more milk or flour if needed. Spoon onto a sprayed
    hot waffle iron. Bake about 8-10 minutes. As batter sits it will absorb
    moisture and get thicker. Just keep adding a little more milk.
