    Vegan TVP Roast or Patties

    Source of Recipe

    PAMW4

    Recipe Introduction

Here's another recipe for TVP that I just tried last night. I thought it was great (although I added too much seasoning), and even my non-veg husband found it edible. I cut the recipe in half and did the patties. Half the recipe made about 6 regular size patties, and a leftover heated up well in the microwave. They didn't stick together terribly well, but good enough to do the job. I believe I got this recipe from "Becoming Vegetarian," but I'm not certain.

    List of Ingredients

    1 1/2 c onions, finely chopped
    2 cloves garlic, minced
    1 Tbsp vegetable oil
    2 c unflavored TVP
    2 c hot vegetable broth
1 Tbsp tamari or soy sauce
2 c whole wheat bread crumbs
    2 Tbsp nutritional yeast flakes
    2 Tbsp vital wheat gluten
1/4 c tomato sauce or ketchup
1/2 tsp each: ground thyme, rosemary and sage
    1 Tbsp dried parsley

    Recipe

Saute onions and garlic in oil and cook until onions are soft. In a large bowl, combine all other ingredients and add the cooked onions and garlic. Mix well. Allow the mixture to set for 5 minutes.
    Making a roast:
Preheat oven to 350 F. Place the roast mixture on an oiled
cookie sheet or in a loaf pan. Bake for 1 hr or until nicely
browned and firm. Place roast on a platter and serve hot with gravy. If you double the recipe and make 1 large roast, cook for 1 1/2 hrs.
    Making Patties
Form patties about 3 inches across and 1/2 inch thick. (Keep
hands wet to avoid sticking). Fry in a little oil or bake on a cookie sheet in a 350 F oven for 10 min or until golden brown. (I turned them over after about 8 minutes to brown the other side).
Serve w/ condiments on a whole wheat bun or pita bread, or
cover with your favorite gravy or tomato sauce, and cook in a microwave or oven for a few minutes. For crispy patties, try coating them in seasoned cornmeal before frying.
(I coated a few patties with cornmeal before baking, but it made no difference.)
