    Submitted by Tea Cozy: Prepared by Tammy, adapted from The Peaceful Palate by Jennifer Raymond, Previously posted to Christian Vegan Cooking list by Denise My adaptions were to increase the quantities by 50% (I had 3 ripe bananas whereas the recipe only required two), and to substitute rice vinegar for 'plain' vinegar and maple syrup for molasses. It was a fruity, subtly sweet, and the texture reminded me of fudge. I'm thinking to add walnuts and call it a banana fudge next time!

    List of Ingredients

    3 cups organic whole wheat pastry flour
    2 1/4 organic baby rolled oats
    1 1/2 tsp baking soda
    3 ripe organic bananas, mashed
    2 1/4 organic soymilk
    3 tbsp rice vinegar
    3/4 cup maple syrup
    3/4 cup organic chopped dates

    Recipe

    Mix dry ingredients and make a well in the center. Add the mashed bananas, then pour in the liquid ingredients and the dates.
    Stir together just to mix, then cook in greased casserole dish for 375 degrees and bake for about 40 minutes (look for it to rise and it will crease a bit when it is fully cooked).
