    3 cups unbleached flour
    1 1/2 cups sugar -- *see Note
    1 teaspoon salt
    2 teaspoons baking soda
    6 tablespoons cocoa powder
    2 teaspoons vanilla
    2/3 cup canola oil
    2 tablespoons vinegar
    2 cups cold water
    Chocolate Cream Frosting (vegan)

    Preheat the oven to 350 degrees.
    Combine the flour, sugar, salt, baking soda and cocoa powder in a bowl and stir with a fork until mixed. Make a well in the center and add the vanilla, oil, vinegar, and water. Stire with a whisk until well mixed.
    Pour into a 9X9 baking dish or cake pan. Bake for 30 minutes until a toothpick inserted comes out clean.
    Cool completely, then frost with Chocolate Cream Frosting.

    Serving Ideas : Can easily be doubled. I only needed about five more minutes baking time.
    I made this for Rita's 50th birthday. It was a hit.
    NOTES : * use sucanat
    This recipe tastes best using unbleached white flour.
