I made the Lemon Poppy Seed variation this spring for a birthday. I cubed the cake and put it in a pretty bowl and layered it with a coconut cream topping, then a layer of strawberries, etc. It was really good.
I've also discovered that if I add a pinch of stevia that it is really nice, too. I still add the 1/2 c sugar crystals (I use either sucanant or organic dehydrated sugar cane juice) and then the 1/2 c date sugar...but, that isn't a very "sweet" cake. If you add the stevia you don't miss the rest of the sugar imho.
Just recently I made this cake into a rhubarb 'upside down cake' by making the poppy seed version but, didn't add the poppy seeds. I also used only dehydrated sugar cane juice and didn't use any date sugar (used a full cup) I also sweetened about 4 stalks of rhubarb and thickened with tapioca (be sure and cook this mixture until it is very 'saucy' and then sweeten and thicken). I put a couple Tablespoons full of the mixture into the cake batter all over the top of the cake, here and there, just before it all went into the oven. I baked it like usual (probably a little longer than usual) and it turned out wonderful. We made Better than Milk ice cream to go on top of this...YUM!!
