Fabulous Fudge

Makes 2-3 dozen squares
This recipe will debunk anyone's notion that eliminating eggs & dairy
means sacrificing sweets. This classic fudge is soft, creamy, and richly
flavored It's perfect to pack in a lunch or to serve at your next casual
gathering. Just be sure to have a nice cold glass of soymilk on hand.
And remember, unlike "traditional" fudge, there is absolutely NO
cholesterol in our version!
6 tablespoons butter substitute (recommended: Earth Balance)
3-1/2 cups confectioners sugar
1/2 cup sifted cocoa powder
1 teaspoon vanilla extract
1/4 cup soymilk
1 cup of chopped nuts (if desired)
Lightly grease a 5x9-inch pan with a little of the butter substitute.
Place all ingredients, except for nuts, in a double boiler. Place over
simmering water and stir until smooth. Add nuts (if desired) and pour
mixture quickly into prepared pan. Chill thoroughly and cut into squares.
NOTE: If you don't have a double boiler, don't run out to buy one.
Simply place a smaller pot in a larger pot of water.
