Well this week, I found a new recipe, and while the original recipe calls it Cashew Mayonnaise, it tastes really yummy on baked potatoes - I like it even better than butter :-)
List of Ingredients
1 cup water
3/4 tspn salt
1/2 cup cashews
3/4 tspn onion powder
1/4 tspn garlic powder
Recipe
Blend all together until very smooth
Cook over a medium high heat stirring constantly until thickened. Remove from heat and stir in 2 Tbspns lemon juice.
Keep refrigerated - will last about 10 days refrigerated. I keep it a container in the fridge
