    (1917) Tomato Catsup

    Purity Flour Cookbook 1917 edition

    List of Ingredients

    1 gallon chopped strained tomatoes
    4 tablespoons salt
    3 tablespoons black pepper
    3 tablespoons mustard ( I think they mean mustard powder)
    1/2 tablespoon cloves
    1/2 tablespoon allspice
    1/3 teaspoon red pepper
    3 garlic, chopped (could be cloves of garlic or heads of garlic, I add at least a whole head as I like garlic)
    1 pint vinegar

    Recipe

    Boil until required thickness, with the dark spices and garlic in a piece of cheese cloth to prevent the catsup from turning dark.
    Place in hot sterilized jars and seal.
