ALMOND PECAN COOKIES

3 cups pecan meal
4 cups whole wheat pastry flour
1/4 tsp. salt
1 cup pure maple syrup
1 tsp. vanilla
1 Tbsp. almond extract
1 cup oilRecipe
Mix dry ingredients together. In a separate bowl, whick wet ingredients together until well blended. Combine the two mixtures and stir well.
Using a 2 Tbsp. scoop, measure out dough onto an oiled cookie sheet. Flatten each cookie to a thickeness of 1/2 inch. Bake at 250 degrees for 12 - 14 minutes. The cookies should feel firm and look dry.
