    Jin Dui Chinese Sesame Cookies

    6 oz. sweet potatoes
    1 1/2 cup glutinous rice flour
    1/3 cup all-purpose flour
    2 Tbsp granulated sugar
    1/2 cup hot water
    10 oz. red bean paste
    2/3 cup white sesame seeds
    oil for frying

    Recipe



    Peel sweet potatoes and place in a pot of water. Boil until tender, about 20 minutes after attaining the boil. Mash sweet potatoes. Sift flours together in a large mixing bowl. Blend in sugar and mashed sweet potatoes. Knead mixture until thoroughly combined, sprinkling in hot water as kneading.
    Knead dough into small balls and roll each ball into a
    flat round shape. Spoon a little red bean paste into each flattened round as a stuffing and knead dough back into a round ball. Coat cookie balls with cold water, then cover thoroughly with sesame seeds.
    Warm a pan of oil over moderate heat. Reduce the heat after oil is warmed, and deep-fry the cookies on a low heat setting, until the balls are swollen and golden. Drain on paper toweling and serve. Makes about 3 dozen fried cookies.
