Mint or Regular Carob Chip Cookies

Tea Cozy
Mix in a bowl:
2 cups whole wheat pastry flour
3 Tbsp. Featherweight Baking Powder (use only 2 Tbsp. if using regular
baking powder)
1/4 tsp. salt
Blend together:
1 Tbsp. mint extract
1 cup water
1/2 cup cashew pieces
2 Tbsp. carob powder
1 Tbsp. vanilla
1 Tbsp. liquid sweetener (maple syrup/agave syrup)
3/4 cup date pieces
1 tsp. lecithin (optional)
Mix together for 5 minutes. Add and mix in:
1 cup walnut pieces, optional
1 cup carob chips (dair-free;barley malt sweetened)
Dough will be stiff. Spoon onto Pam-sprayed cookie sheets and bake at 350
degrees for 12 - 15 minutes. Watch carefully so they do not overbake.
Makes about 24 cookies. For regular carob chip, celete the mint extract.
