    PEANUT BUTTER AND JELLY COOKIES

    List of Ingredients




    Cream the following together:

    1 cup pure maple syrup
    1 tsp. vanilla
    3/4 tsp. salt
    3/4 cup creamy peanut butter, natural
    1/4 cup water
    Set aside. In a blender container, grind the following to make a flour:

    1 1/4 cups quick oats

    Mix the oat flour into the creamed mixture along with:

    2 cups whole wheat pastry flour

    Allow mixture to sit for ten minutes while the oats absorb the moisture and loose their stickiness. Roll the dough into 1 Tbsp. balls and place on a cookie sheet. Press a thumbprint into the center of each cookie. Spoon 1/4 tsp. seedless all fruit jam into each thumbprint. Bake at 350 degrees for 10 - 12 minutes. Do not overbake. If you freeze these cookies, allow them to "set" for 24 hours first so the jam hardens.
