Ingredients:
Curry powder
whole bay leaf
dried aniseed
coconut milk
brown sugar
lemongrass
cabbage
snow bean
carrot
yam
taro
tofu
salt
vegetable
oil.
Recipe
Pre-cook:
1.peel & cut yam, taro, carrot, cut tofu to small pieces
2.fry tofu with mid fire until golden color then put yam, taro and keep fry 10 minutes.
3.peel & chop lemongrass (the white part) and cut green part.
Cook:
Step 1. fry chopped lemongrass with vegetable oil until golden color with high fire (take about 5 minutes) then add curry power, dried aniseed and keep fry.
Step 2. add yam, taro, carrot, and tofu, and keep fry another 5 minutes.
Step 3. change to another deep pot and add water, whole bay leaf, lemongrass until yam and taro soft.
Step 4. add sugar & salt and vegetable(such as, cabbage, snow bean) until water boiled.
Step 5. add coconut milk and finish.
p.s. If you like to eat spicy then add more curry powder.
It takes about one hour to cook for six servings and costs less than $10.
