    1 cup all-purpose flour
    1/4 cup brown sugar, packed
    1/2 tsp. baking soda
    1 tsp. baking powder
    1/4 tsp. salt
    1 1/2 tsps. cinnamon
    1 cup bran flakes cereal, crushed
    1 cup soy milk
    6 Tbsp. egg substitute
    1 carrot, shredded
    1 ripe banana, mashed
    1/3 cup chopped walnuts

    Preheat oven to 375 degrees. Spray an 8x8 inch square baking
    pan with nonstick vegetable cooking spray. In a medium bowl,
    combine flour, sugar, baking soda, baking powder, salt, cinnamon and cereal.
    Mix well. In a small bowl, combine soy milk, egg replacer, carrot, banana and walnuts. Add to dry ingredients. Bake 25 to 35 minutes or until brown on top. Cut into 12 pieces. Makes 12 servings.
