about 5 ripe/over ripe banana's
1/4 cup of sugar (I use less, depends on how ripe the banana's are)
1 tsp Vanilla essence
Two cups of flour (I use wholemeal)
2 tsp of baking powder
1/2 tsp of baking soda
And I normaly throw a couple of handfuls of dried fruit in.Recipe
Ok, blend the banana's, sugar and vanilla togther until smooth.
In another bowl mix all the other bits, then add the wet to the dry, give it a good stir and dump into a cake tin. And place into an oven at gas mk 5 for about 1 hour.
Notes.
Dried fruit optional.
Works with less banana's and a tin of apples blended.
Before placing in the oven a light sprinkle of brown sugar works well.
