    List of Ingredients




    2 cups fresh rhubarb cut into about 1/2 inch piecs
    1 cup flour
    1/2 cup soft vegan margarine
    1/3 cup powdered sugar

    Recipe



    Mix the flour and butter until it is like coarse crumbs. Add powdered sugar and press into a buttered nine inch square pan. Bake for 15 minutes at 350 degrees or until golden color. When this is baking, beat substitute for 3 eggs and add 1 1/4 cups sugar, very gradully. Beat until this is light and fluffy, about 5 minutes on high with an electric mixer.
    At low speed add:

    1/4 cup flour
    1 tea. baking powder
    1 tea. vanilla
    1/4 tea. salt

    Fold in rhubarb with a spatula. Pour over baked crust. Spread evenly and bake at 350 degrees for 40 minutes and top feels dry. Serve cooled with whipped cream.
