CARROT MACAROONS

List of Ingredients
2 cups raw carrots, grated and tightly packed
1/2 cup water (plus enough to pour over carrots in measuring cup to fill)
1 cup honey (or alternative liquid sweetener)
1/4 cup canola oil
2 tsp. vanilla
4 cups shredded, unsweetened coconut
1 cup whole wheat pastry flour
1 tsp. saltRecipe
Mix all of the ingredients together well. Let sit for 5 - 10 minutes.
Measure out 1 Tbsp. sized cookies and pat each one down until slightly flat.
Bake at 350 degrees for 20 - 25 minutes. The edges will turn a medium brown. Crispy is good!
