Old-Fashioned Baked Apples

What better smell is there than cinnamon and apples cooking on a chilly
winter day? Top with a vegan "whipped cream," such as Hip Whip by Now
and Zen. Available at Lakeshore Natural Foods, Whole Foods, Berkeley
Bowl, and Rainbow Grocery. Or top with vanilla Soy Delicious or any
other vanilla non-dairy ice cream.
Serves 4
Ingredients
4 apples (many apples work well: Granny Smith, Macintosh, Rome Beauty,
Cortland, Gravenstein)
1/2 cup brown sugar
1-1/2 tablespoons chopped pecans or walnuts
1-1/2 tablespoons raisins
4 tablespoons Earth Balance or any non-dairy margarine (optional)
4 cinnamon sticks
1/3 cup apple juice
Directions
1. Preheat oven to 375 degrees. Cut the top off each apple and
then core and seed them, but do not cut to the bottom of the apple. Cut
off a thin slice from the bottom of each apple to allow apples to stand
flat.
2. Mix the brown sugar, nuts and raisins and fill each apple. Put
one cinnamon stick in each and put a tablespoon of Earth Balance on top
of the apples.
3. Place filled apples in a greased baking pan and add apple juice
to the bottom of pan. Bake until apples are tender and soft, basting
occasionally for about 35 to 40 minutes.
4. Serve as soon as they come out of the oven with vanilla
non-dairy ice cream or vegan whipped cream.
Variation: Eliminate the dessert topping and enjoy for breakfast warm or cold.
