Victorian Sugared Walnuts

1 cup sugar (Florida Crystals)
1/2 teaspoon cinnamon
1/8 teaspoon cream of tartar
1/4 cup boiling water
1 teaspoon vanilla
1 pound shelled walnut halvesRecipe
Combine the first 4 ingredients in a saucepan large enough to hold nuts.
Heat mixture until sugar dissolves. Boil syrup, without stirring, to 240 degrees F on a candy thermometer.
Immediately add vanilla and nuts and stir continuously until nuts are completely coated and separate from each other.
Turn out nuts onto a silpat mat or brown grocery bag and separate.
Dry thoroughly.
Store in airtight container or freeze.
