List of Ingredients
1 cup uncooked bulgur (preferably coarse)
2 cups broth or water
1 cup broccoli, chopped
1 green pepper, chopped
1 small zucchini, chopped
1 medium onion, chopped
12 oz. soy cheese (mozzarella type)
1 large tomatoRecipe
In a large saucepan, bring the water to a boil, add the bulgur, and cook over a low heat for about 20 minutes. Check the bottom of the pan periodically to make sure all the water hasn't been absorbed, and add a small amount more of water if needed.
Chop the vegetables while the bulgur cooks. When the bulgur has cooked 20 minutes, add the chopped vegetables to the pan. Cover and let steam over a low heat for 10 minutes. Meanwhile, grate the cheese and dice the tomato. Add these two ingredients to pan and cook until the cheese melts and the
tomato is heated through. More seasonings can be added if desired; garlic, onion, herbs).
