Recipe Introduction
This is a tofu version of Myanmar's National Dish.
List of Ingredients
1 lb. tofu, drained and cut into chunks
1 tbsp Ginger, finely chopped
6 cloves Garlic
2 stalks Lemon grass
1/4 cup Vegetable oil
1 tsp. red chile powder, (Prik Ki Nu)
1 tbsp.Turmeric ground
4 cup Rice flour
1 1/2 cups Dal (lentils), cooked and coarsely mashed
2 cups Pearl onions
1 Banana, large, sliced
Condiments:
Lime Juice
Chiles,red, dry,crushed ( the hotter the better )
Cilantro fresh, chopped Recipe
Pound the ginger, garlic and lemon grass (the fat, bulbous,
bottom part) in a mortar. Saute this mixture in the oil with the chile powder and turmeric for about 2 minutes. Add the tofu, and cook for an additional 2 minutes, coating the tofu pieces with the spiced oil. Remove from heat. Whisk the rice flour into 2 quarts of water. Gently boil until the mixture thickens, adding additional flour if necessary. Add all the other ingredients, except for the tofu and garnishes, and simmer for 5 minutes.
Add the tofu and simmer until the onions are tender, about 5 more minutes. Serve the condiments on the side.
